When a distillery tastes like a place. A visit to Husk Distillery.

What does a place taste like?

It’s a question that sits at the heart of every great drink and every memorable meal. In the Tweed Valley, set against the dramatic, ever-present backdrop of Wollumbin, the answer is being bottled every day at Husk Distillery.

The Husk Distillery
This is not just a place that makes spirits; it’s a place that has a spirit, a tangible connection to the rich, volcanic soil of its family-run farm.

It’s a declaration of intent, a confident statement about the future of Australian spirits.

The philosophy here is "farm to bottle," and it’s not just a marketing slogan; it’s a reality you can see and touch. The sugar cane that becomes their signature agricultural rum grows in the surrounding paddocks.

This deep connection to the land is the thread that runs through everything they do. The distillery itself is an innovative piece of architecture, a breezy, sophisticated space that manages to feel both like a world-class venue and a relaxed, family-run enterprise.

The Husk Distillery Rare Blend Rum

The staff are a credit to the brand, their product knowledge honed and delivered with a genuine, infectious passion for the craft.

But Husk Distillery is more than just rum and gin

The cellar door menu is a perfect reflection of this philosophy—high-quality, locally-focused, and designed for sharing. It’s a procession of brilliant little plates: smoked olives, fresh schiacciata bread with a ridiculously good honey-smoked butter, and confit cherry tomatoes with whipped honey feta. The more substantial dishes, like the free-range chargrilled chicken with smoked hot honey or the slow-braised beef massaman, are refined but without a hint of fuss. This is the good stuff, designed to be enjoyed on the expansive lawn, cocktail in hand, as the sun dips behind the mountain.

But the food and the wonderful views are just the opening act. The real reason you're here, the experience that transforms a great afternoon into an unforgettable one, is something more intimate, a story waiting to be told.

The Insider's Tip:

You must book the private Ink Gin tasting. It’s a revelation. Our guide, Mark, didn't just give us a tasting; he told us a story. A story of a family's obsession with agricole rum, of the years of experimentation that led to their signature "Pure Cane" spirit, and of the happy accident that became the global phenomenon of Ink Gin.

The tasting is a masterclass in the art of botanicals, but the real secret is the reward at the end: a tasting of their pure Cane Spirit, the un-aged, vibrant heart of their rum. It’s a moment that gives you a profound new appreciation for the craft of Australian spirits.
